Tiny Waist Zucchini Bake

If you are looking for a delicious side dish to liven up lunch or to share with  friends at a dinner party, look no further.  Here’s a colorful casserole that is tasty and will help you regain, or maintain that ity-bity waistline.  This recipe, like many of the recipes I love and prepare, was created on the fly and turned out really tasty!  This dish works really great as left-overs too because as it bakes, it makes a delicious savory broth, that can be enjoyed over your favorite whole wheat pasta or brown rice. I have listed the ingredients I used, but encourage you to add your favorites, whether it be a spice here or there, or a favorite herb. Personalizing recipes is a great way to integrate healthy bites into your everyday meals.

Zucchini 1

“Tiny Waist Zucchini Bake”

Zucchini (one very large or 2 medium, hollowed out and chopped into small cubes)

Large yellow onion (chopped)

Green pepper (chopped)

Red pepper (chopped)

Fresh parsley (a handful,  roughly chopped)

Diced tomatoes (2 cans…I’m loving these)

Garlic (one clove, chopped)

Extra Virgin Olive Oil (enough to sautee garlic)

Seasoned bread crumbs (1/4 cup)

Pre-heat the oven to 350 degrees. Add the olive oil to a sautee pan and and sautee the chopped garlic.  Add the zucchini, onion, red and green pepper, and sautee over medium heat, stirring just enough to coat the vegetables with the garlic-infused oil.  Remove from heat, and add two cans of diced tomatoes and fresh parsley.  Fold the mixture together in the pan.  Using a slotted spoon, transfer the vegetable mixture into a baking dish.  As it bakes, it will make a savory broth, so it is not essential to get all the liquid from the pan to the baking dish.  Sprinkle the seasoned bread crumbs evenly over the vegetable mixture.  Put the baking pan into the already heated oven and bake for 30-35 minutes. Mangia bene!

Join the Dogster Summer Streak Showdown

Visit my family

#1 dog site for dogs & bipeds!

Both Tino and Lola have profiles on Dogster, the “Facebook for dogs”.  Well, how else do you expect them to meet other nice pups who like long walks in the park and candlelit dinners of lamb and rice???

It’s a really cute site where you can learn lots of great information about different breeds of dogs, check out forums full of great pet info or just look at cute pictures of puppies…but I must warn you, prolonged perusing of  adorable puppies may have you wishing you had one…or three.

Another great feature of Dogster is that they often run cool contests and this month they are testing your knowledge of dog breeds big and small.  They are offering up pet-friendly prizes, like  Petsmart gift cards and a Dyson vacuum.  But, no need to worry if your doggie breed IQ isn’t up to snuff, you will be entered for a chance to win one of five door prizes just for playing. This contest is unique in that it’s not about the highest score, but the longest streak of right answers in a consecutive game.  While you are at the site, you can check out doggie info in your area and get good reviews on things like pet-friendly businesses, vet care, and the best dog-runs…just to name a few.

And Cat lovers needn’t feel left out, Dogster’s sister site, Catster, is an equally amazing source for all things feline, from keeping your kitty healthy to fun quizzes, like what celebrity is your cat?

Click on the dogster badge above to see Tino’s and Lola’s pages and to meet their west coast “brothers from another dog mother”, Tank and Dozer!

Send some virtual lovin’

Tino is creating a smilebox design for his sweetheart.

Tino is creating a smilebox design for his sweetheart.

Seems everything is done online today, from banking to shopping to catching up on episodes of your favorite television shows. (Guilty!) So why not put that computer savvy to use and send some virtual  love to someone special with a unique design? Visit Smilebox.com and create amazing greetings with your photos, videos, and music. Email them free. You are given templates to create a cute virtual photo album, scrapbook or card. They even have a great premium upgrade available called Club Smilebox.

I love crafty projects and personalized treasures, anyone who knows me or has seen my cell phone could tell you that…it’s beyond bedazzled!!!  With this easy-to-use program I created some super cute personalized cards and photo albums that are convenient to share with family and friends via email.  This past anniversary, I made a photo montage for hubby instead of a run-of-the-mill paper card.  I was able to use some of our favorite photos and and add a sentimental soundtrack.  It was a memorable gift that we were able to burn to a disk and have as a keepsake for many anniversaries to come.

In addition to creating cards, you can surprise a friend with a virtual scrapbook from a big event, like a bridal shower or bachelorette party.  Mommies can mark occasions like birthdays and other tender milestones by adding videos and photos to a scrapbook template.  With a little practice with this user-friendly program, you ‘ll soon be a Smilebox-creating Goddess!

Here is an example of a Smilebox creation I made as a special thank you card from Lola to her special “pup pal” after she received some gifts through a gift exchange sponsored by Yorkietalk, a breed-specific fan site.

‘Tis the Season

Sack 'em this season with your football knowledge.

Sack 'em this season with your football knowledge.

The time is upon us for many of us to lose our husbands, boyfriends, or friends to the seduction of the NFL.  As a wife of a hubby who, let’s just say, may be interested in football, it has become clear to me that Sundays are now “football” days, errr… wait and Saturdays…and some Thursdays, and also Mondays…so what’s a girl to do?  I say, if you can’t beat’ em (and you won’t) join ‘em!

First off, it’s important to learn a bit about the game.   There is a lot of information out there, so why not start at the source? Try the NFL rulebook where you will find not only the rules of the game, but also a great beginner’s guide to the game and a listing of the official signals. Try not to giggle as you click through the black and white drawings of the signals…I dare you.

Ok, so you got the basics, but let’s be real. Over-sized jerseys are not what I want to be wearing on game days. Sure, some teams make really cute pink versions or more fitted T’ees, but for something a little more unique, check out Touch by Alyssa Milano .  She has created a really fun and girly line of NFL, NBA, MLB, UHL, NCA apparel so you can cheer on your favorite team and still be cute as a button!  Those cheerleaders will have nuthin’ on you!

Movie mapping made easy

When I tell people that the first time I ever saw the movie E.T. was a few months ago, they look at me like I just told them the saddest thing they had ever heard…they extend their hands to me to offer some sort of condolence, as to try and make up for my bleak, “phone-home-free” childhood.  But, visiting Universal Studios and experiencing the E.T. ride inspired me to see the classics that I never had a chance to enjoy.

I found a really cool site called liveplasma that allows you to take your favorite movie and insert it into a unique search that “maps” you several other suggestions that you may love!  So let’s just say your favorite movie is…um, well Pee-Wee’s Big Adventure.  Hey, don’t judge me, people, I already told you I was fragile because of the whole E.T. thing.   Anyway, you type in Pee-Wee’s Big Adventure and you’re given a mapping of other movies to try.  (think six degrees of separation) Low and behold, another one of my favorites appears…The Addams Family.

Jaws was a classic...

Jaws was a classic...

This is a great tool for music too.  Love MJ?  Try Prince. Love Black eyed Peas? Try Sophie Ellis Bexter.  Make sure to register, it’s free and you can keep your mappings for later viewing.  See an artist you like in one of your current mappings? Click on that artist to expand a new map of music similar to theirs. You can even send your mapping to a friend if you think they might enjoy your results. I can’t wait to add some of my new movie findings to my netflix list…now if I would could remember to send back the movies I already have…
